The Paramount Panna-Cado




When I'm not making gelatin, or laying around my apartment in my jammies, sometimes I go to work. This week at my job at the Paramount Theatre, one Anthony Bourdain came in with his friend Eric Ripert for their show, Good Vs. Evil. My boss let me make some shots for the gentlemen and send them back stage. This is what we came up with. It's mostly a traditional Panna Cotta with the addition of avocado and, of course, some booze.  I think it might have been the most delicious one I've tasted, but I was eating a lot of sugar while making that brittle, so I might not have been thinking straight. The cognac was not cooked down, so the fig puree has a definite kick to it, but if you don't like the burn of a warm liquor, you can cook off the alcohol before soaking the figs.

Love these metal cocktail picks. not really practical for serving the jello shots, too much bloodletting! Cool effect, though.
There is actually less than a teaspoon of chocolate syrup in each heart.

The Jello Dolly has been a long time coming. Meg and and I (Cory) first tried this out in 2010, the only photo of this experiment was taken with a phone and you will see it on the left.

Pineapple flavored gummy bears infused with coconut rum, and gummy bears infused with Kraken, black rum. These are placed upon a delicious pineapple coconut jello shot, made with coconut cream, crushed pineapple, and the very rums we used to soak the gummy bears.

Geez, tough question for me to answer. I didn't get the nickname Moe-rage from my biker buddies by chance. It took a lot of irrational unfettered anger issues, frequently followed by bursts of tears, I'm sure you can relate. It's what a good irish american lass does, right? Anyway, no one can stay mad after offering them a tray of Blue, fruit filled, lemon zest topped Jello shots. Plus dog is spelled dawg! Classic! sure to put a smile on that grumps face.

Jello Origami

JELLOGAMI!

We've been experimenting with making Jellogami for a few months now- meaning we tried it a few months ago, and finally got around to taking a photograph.

Well, How'd ya do it?
The "paper" is actually granulated gelatin, water, and food coloring painted over gelatin veining sheets. The origami is faked, we used scissors and "glue" (warmed gelatin and water).

What does it taste like?
That green one in the photo above (there is a video of it's creation below) taste like nothing. The gelatin is unflavored. But the pink ones are ROSE flavored! Delicious! The rose syrup was added with the food coloring. Rose syrup what I had on hand, but we'll try it again with hard candy extracts. 

This isn't a Jello shot. 
We know. We got the veining sheets (thanks mom!) to decorate our jello shots:

Santas



Santa von Klause

Totally delicious, and a crowd pleasing strawberry chocolate, you could make these tomorrow!

You will need:
Strawberry Jello (we used D'gari*),
A little squeeze of chocolate sauce (optional, but we used it)
Chocolate flavored vodka/rum/liquor/whatever*
Red Food Coloring (optional)
A loaf pan
Sharp knife
White gel food coloring (I got ours at Fantes)+ a tooth pick applicator
Santa Cupcake Picks (I got these at Dino's), trim the picks so they aren't so long.

Spiced Old City























On my way to work, I have the honor of breezing past America's most boring historic sites: Liberty Bell, something called Independence Hall, and several places Ben Franklin once, I don't know, mailed a letter or something. I feel bad for families of grouchy children being dragged from the (wasn't actually) Betsy Ross House to the Merchant Exchange-so I'm ready with suggestions for Federal-Era overdosed tourists.

B.L.B (Bacon, Lettuce, Bloody Mary)


As grunt workers of the service industry, we have our finger on the pulse of what is 'hot' in dining. The ebb and flow of nutrient popularity based on a multitude of requests. Since we get inspiration from every aspect of our lives, this shot is for all my gluten free people. Say Hay! Denying yourselves the tasty goodness of bread (and toast) and by default, the most delicious of bread based fare, the B.L.T.

This B.L.T. in addition to being gluten free, alcohol filled, and sans mayo, differs from tradition in one more way. Instead of T(omato) it's B(loody Mary). Perfect for brunch parties, Lunch parties or a quiet night at home with a good book.

ClemenThyme



It's the Thyme of the Season...
When Love runs High

We know many people believe that spring is the time for love running high, but we personally feel extra loving as the temperature cools and you just want to hug up on some warmth. In honor of this very special time we made some Thyme infused simple syrup. We combined it with clementine peel infused vodka and fresh squeezed Clementine juice in order to help increase vitamin C intake.

Gotta fend off those sniffles if you want your warmth to share a kiss.
